A Story Told in Seven Courses
At The Burgundy, dinner is not simply a meal — it is a narrative. Each of our seven courses is a chapter in a story that unfolds across the African continent, from the sun-drenched markets of Marrakech to the spice-laden kitchens of Zanzibar, from the smoky grills of Lagos to the delicate flavours of Cape Town.
Chef Stone spent nearly a decade travelling to every corner of Africa before opening The Burgundy. "I wanted to understand what connects us," he explains. "And I found that the answer is always food. Every culture has its version of a stew, its way of honouring a guest, its celebration dish."
The Architecture of a Tasting Menu
A 7-course tasting menu is not seven random dishes arranged on a timeline. It is an architectural feat — each course must build upon the last, creating rhythm, contrast, and crescendo.
The Welcome (Petit Four): Before the first course even arrives, guests receive a petit four — a collection of bite-sized introductions. Think of it as the overture before the opera begins. Our current iteration features a chin chin shell with whipped salted caramel, zobo jelly, and white-chocolate-dipped strawberries.
Courses 1–2 (The Opening): Light, bright, and designed to awaken the palate. These courses introduce the evening's flavour direction without overwhelming.
Courses 3–4 (The Development): Here the story deepens. Richer flavours, more complex techniques. The Nigerian meat pie reimagined as an open short-crust tart. Egusi soup transformed into an emulsified, silky consommé.
Course 5 (The Interlude): A palate cleanser — our lemon cello sherbet — that provides a moment of rest before the climax.
Course 6 (The Crescendo): The main event. Currently, a confit duck served with jollof-fried bulgur, chimichurri, and cranberry jus. This is where Africa meets the world.
Course 7 (The Resolution): Dessert brings the story home. Sweet, satisfying, memorable. A chocolate tart with strawberry compote and salted caramel that lingers long after the last bite.
Why Seven Courses?
Seven is intentional. It is enough to tell a complete story without exhausting the guest. Each course is portioned to satisfy curiosity without creating heaviness. After 70 guests each night experience this journey, the most common response is not "I'm full" — it is "I want to come back."
The Rotating Canvas
Every 4–6 weeks, the entire menu changes. This means The Burgundy has served 17 distinct menus since opening in June 2022. Each new menu is a fresh story, drawing from different regions, seasons, and inspirations. Returning guests never have the same experience twice.
The Burgundy seats 70 guests nightly, and every single one of them receives the same meticulous attention to narrative, technique, and presentation. This is not mass dining — it is intimate storytelling through food.
